My potato box is like a treasure chest. 🗃 Discovered this new to me variety in the purple potato range, not the sweet potato ones! The little round ones on the top right corner. They are an excellent source of Vitamin C, fiber and Iron. And yes they are fat free (all potatoes are!) Anthocyanins are the pigments in the potato that give it the purple hue. In addition to adding pop to your plate, anthocyanins offer extra health benefits too. The purple pigments are antioxidants that protect your cells from oxidative damage and may reduce your risk of heart disease and certain types of cancer. Anthocyanins may also offer protection to your brain to prevent cognitive decline. Researchers are still investigating the health benefits of the powerful pigments, and believe the benefits are due to a special component in the compounds beyond their antioxidant capabilities.
Colder ❄️🌫 days invite warming ♨ food. Eating complex carbohydrates will help with energy. The unfortunately unfamous carbs are getting such a bad name nowadays but the facts are: 💣 Complex carbohydrates have more nutrients and take longer for your body to digest, so they help fill you up and don't cause the same swings in blood sugars as simple carbs. ... Grains, beans, fruits and vegetables (yes, even potatoes) all contain complex carbohydrates. 💭Not to mention that the brain has a very high rate of metabolism, using ~5.6 milligramme of glucose per 100 gram of brain tissue per minute. Dr Ashish Shrivastav, senior consultant neurosurgeon at Apollo Hospitals explained, “Carbohydrates are the only nutrients which can match this rate of energy requirement. However, the brain prefers to get its carbohydrates from carbohydrate rich whole foods rather than simple sugars. The cognitive functions or the thinking capabilities of the brain deteriorate if the glucose levels fall in the brain. A rapid relief can be obtained from carbohydrate rich whole foods. At the same time, glucose from simple sugars causes detrimental effect to the brain. Hence, glucose from whole food carbohydrates is essential in diet but excess simple carbohydrates are harmful.” . . . #craftednourishment#delicious#foodshare#organic#health#healthcoach#nutrition#cleaneating#healthychef#consciousliving#vegetarian#vegan#wholefood#plantbased#wfpb#lovefood#moment#moodsnapshot#soulfood#bewell#lovelife#eatforlife#nonasties
