My potato box is like a treasure chest. πŸ—ƒ  Discovered this new to me variety in the purple potato range, not the sweet potato ones! The little round ones on the top right corner. They are an excellent source of Vitamin C, fiber and Iron. And yes they are fat free (all potatoes are!) Anthocyanins are the pigments in the potato that give it the purple hue. In addition to adding pop to your plate, anthocyanins offer extra health benefits too. The purple pigments are antioxidants that protect your cells from oxidative damage and may reduce your risk of heart disease and certain types of cancer. Anthocyanins may also offer protection to your brain to prevent cognitive decline. Researchers are still investigating the health benefits of the powerful pigments, and believe the benefits are due to a special component in the compounds beyond their antioxidant capabilities.

For me food prep is never too complicated. Wash, Peel, Chop, slice, grate for my everyday raw veggies. Easy to grab for a snack or a quick salad πŸ₯—. Always have a warming pot 🍲 of soup, a batch of brown rice, or quinoa, or barley, or legumes ready to go so the base of any meal is always ready to be used when time poor. I have a tendency to cook with whatever I have in the fridge rather than planning ahead. Not to mention I can't get my head around eating the same thing everyday πŸ˜‹.
