Has a dish ever made you cry before? That’s exactly what happened when I experienced the @mugaritz “music box.” A hushed silence fell over the dining room as a perfect choreography of waiters brought the dish to every table at the same time, regardless of the course they were on in their tasting menu. And all of a sudden, music. Time seemed to stand still as each music box sang a slightly different song, but one that was in perfect harmony with all the others. One note and I was mentally transported to my childhood - a wave of nostalgia washed over me and my eyes filled with tears. This was a deeply personal moment, but also wonderfully universal, especially when I looked up and realized everyone in the restaurant was as emotionally affected as I was. To me, this is the beauty of food. Thank you Chef @andoniluisaduriz and team for an unforgettable meal. So how is the new Gallery by Chele different from its previous life as Gallery Vask? The short answer is— it’s a lot more accessible. • Accessible in terms of price points, length (there are 3-, 5- and 9- courses now, as well as ala carte) and flexibility for customers (ie. If you want a long tasting and your companion wants ala carte— go!) while still maintaining the same quality of techniques, ingredients and flavors (predominately Filipino but of course with a touch of Spanish as that is chef Chele Gonzalez’s heritage) that its patrons have come to love, under the umbrella, “Modern Cuisine, Local Ingredients.” • Case in point: (1) Pan de sal with pure coconut butter, (2) Oyster and scallops ceviche in Tiger’s Milk— they are on a mission to elevate our Filipino kinilaw, which is so similar to ceviche, with the exception of using coconut milk; (3) Octopus cooked inasal-style (roasting, after being marinated in lemongrass, calamansi, coconut vinegar); (4) Tuna belly grilled the Basque way before being topped with green chiles; (5) The Spanish torrija dessert turned Filipino by way of ube or purple yam. • Congratulations team Gallery by Chele!! It's been 4 yrs since i was last here and, all willing, i wanna be back here within next 4 months..heck, even weeks. So much of so good things going on at this place - by now, you've prob heard that their sustainability program has managed to reduce rubbish by 75% since opening 5 years ago. Love a good looking duck, especially if it comes served via a hibachi grill, carved up and accompanied with corn 💛 @hakuhongkong _ Creole Female Duck / Humita _ Humita is a typical South American Corn Dish. The duck is also brushed with honey taken only from orange blossom.
We didn’t feel like leaving our amazing villa at @ritzcarlton Al Hamra Beach so got our favourite sushi delivered poolside instead! 🍣🌊 The sushi from their resort restaurant, the Shorehouse, was SO GOOD we ordered it three times! Some of the best sushi I’ve eaten and let me tell you it kills some of the famous sushi eateries here in Dubai (disclaimer, I only had the vege options).
