I just love yellow courgettes and like the green ones are really easy to grow. We’re often overrun with them, but there are so many ways to eat them that you should never get bored. Fortunately, they are low in calories and high in vitamins A and C, so they really are good for you too. Great cooked or eaten raw. Last night I simply sliced up some yellow courgettes added a squeeze of lime juice and a knob of butter, a few chilli flakes and gently cooked them in a saucepan until tender but still with a little bite. Simple & delicious 😋. Or how about grating them and using in a cake such a the lemon & lime drizzle cake in one of my previous posts.
DAY 7. At the end of #nationalallotmentweek, I find myself feeling a little emotional. I met my new neighbours today, Simon and Lynn who have taken on an overgrown plot just up the pathway. I took them some dahlias as a welcome gift and seeing their eagerness took me right back to the early days of getting my allotment, almost four years ago. We talked about their plans and I shared some tips to help them get stared. Back when my plot was covered in a dense blanket of weeds, rubbish, bramble, tree saplings and so much glass, I remember feeling totally overwhelmed at times, but I knew I wouldn’t give up on creating a garden to call my own. I’ll be looking out for Simon and Lynn with cups of tea at the ready in winter, because I know how gruelling it’s going to be. I’ve put away my job list for today, to sit back and appreciate how far plot 152a has come. Seeing it like this makes all of the hard work worth it.
