If you were to ask what was the dish I enjoyed most during my recent trip to Berlin, I would say it was this beef consomme. It was in the buffet, simple and inconspicuous but the first sip was simply out of this world. A bit like Brand's essence which I love, but multiplied in intensity a hundred times and beefy instead of chicken. Intense umami and it was so salty but I just couldn't stop slurping... This is sth which money can't buy in Singapore and I wonder if @bovril_official tasted like this long ago before they changes it to yeast. Vegetable Beef Soup garnished with scallions 🍲 This is a twist on Mama Qian’s Veggie Soup where a beef broth is used as the base . 🐂 Beef Broth: get a boneless cut of beef shank and cut into cubes around 2x2 inches. Drop into pot of boiling water, add cooking wine, and sliced ginger. Simmer for 5 minutes and take off stove. Rinse and wash the beef cubes under cold water. In a new pot, add 2 slices of ginger and the beef cubes into boiling water. Simmer on medium high for about 40 minutes. Let cool and separate fat from broth (if there is any) 🥕Veggies: slice 1 carrot, chunk 2 tomatoes, chunk 1 potato, dice 1 onion, and roughly chop ¼ of a cabbage. In a wok or pan, heat approx 2 tbs of vegetable oil and throw in the carrots with onions first. Stir and allow them to sweat for approx 5 minutes before adding the cabbage, tomato, and potato. Add approx 1 tbs of salt and let it all simmer with a lid on for approx 15 minutes 🍲 Soup: combine the beef, broth, and vegetables in one big pot. Add salt to taste. Bring to a boil and then turn the heat off. You can serve immediately but I prefer to leave it in the pot for an hour or so. The flavours mix a little better this way and it won’t be too hot!
