That’s why I’m so glad I have little gems stashed in my freezer for these low energy days, like my Mexican black beans. I use these in nachos, tacos, burritos and tonight, quesadillas with a healthy side of guacamole. These beauty’s are sooooo delicious!!! I think what makes them extra yummy is the layer of mayo I put to it. It just gives it a more creamy texture. I always use whole egg mayo, 4 cheese slices some shaved ham and top it off with some mozzarella. This time around they didn’t turn out to pretty but they still are delicious and going to be great for brekky in the morning.
GO FISH - Something there is that doesn’t love a bland dinnerscape! I am that something! So when we do family meals I insist they be bountiful, colourful, healthful and wonderful! Fish tacos is one that looks impressive but you can legitimately whip up this rainbow in 30 minutes. Roughly chop some white fish into chunks and place in a bowl along with the juice of half a lemon (or lime), a teaspoon of paprika, a clove of crushed garlic, a teaspoon of dried oregano and coriander each, a teaspoon of cumin and salt and pepper. Lay these onto a tray and bake. In the meantime mash up and avocado with some lime juice and salt. Chop up some red capsicum, purple cabbage, cherry tomatoes or whatever you like with your tacos. We love cooked corn that has been cut off the cob but canned would work. I also put out some sour cream, Tabasco and chopped spring onion. Warm up some tortillas, bake the fish until crisp and you’re in business. My kids love how hands on they are and how many times they can ‘help’ ferry things to the table for setup. PS: the first line is my attempt at bastardising a Robert Frost poem to sound clever; truth be told it was on a recent Malcolm Gladwell podcast which, if you’re looking for a new one to add to the repertoire, I highly recommend. This is our groceries for the week. This is for 2 adults a 4 year old and a 15 month old plus our dog. This was a total of $120 at @woolworths_au and @aldiaustralia Now I am off to start putting it all away and I’ll start baking on some delicious snack for us and the kiddies. My daughter asked for some ham and cheese scrolls for brekky tomorrow and I’m thinking I’ll also make some choc chip cookies and a muesli slice while I’m at it hehe. Saturday night in for me tonight.
