Cauliflower pizza recipe 🍕 Small cauliflower head (processed into cauliflower rice) 1/2 cup mozzarella cheese 2 eggs (lightly beaten) Salt and pepper Fresh or dried oregano 1tsp minced garlic 🍕🍕🍕🍕🍕 Mix ingredients in a bowl (You May like to steam cauli rice and let dry but I didn’t and loved the texture of the cauli cooked without steaming) Flatten onto pizza tray ensuring it’s spread evenly. Lets take a moment to talk about the power of mindset! . Today was a tough one for me. I’m pretty sure I fell asleep a few times standing up while working. 🤫🤦🏼♀️ I was so tired and in so much pain that all I could do was think about going home and passing out. 😴 . Then I realized something. I was going to feel just as shitty lying in bed. I might as well be making money and keeping my mind somewhat distracted from the pain. . If Endometriosis has taught me anything...it’s that I am so much stronger than I EVER gave myself credit for! Yes, my pain tolerance is high. But my mind is where all the strength comes from. On days where I don’t feel like I can muster up the energy....I know that those are the days that I am being attacked. Because something beautiful is about to happen! And I NEED to push through the pain so I can experience the beauty! . I’m SO glad I went to work today. I met these two vibrant women who had such energy and genuine beauty. We talked for about an hour and we ended the night taking photos together and exchanging contact info. Our paths were SUPPOSED to cross! And if I hadn’t pushed past the pain and suffering, I never would have met them. 🤷🏼♀️ . So next time you hurt. Next time you’re suffering...just know how extremely strong you really are. And, even though it may not feel like it, you can handle it. You can push through it. You are FIERCE! .
