Salmon Chez Shalagh today. Plain pan seared salmon atop a bed of artisan greens topped with a vegetable saute of red cabbage, onion, celery, yellow pepper, zucchini and yellow squash, garbonzo beans, kalamata olives, and red grapes seasoned with the zest and juice of tangerines, coriander, cilantro, ginger, S & P, olive oil, and topped with a side of brown and long grain and wild rice with a homemade balsamic vinegrette. What I think of as a warm salad. . Um, it was really good. I ate it all. . Time to get back to my writing after a weekend/Halloween hiatus. Many things at work here. An easy way to impart flavor...fresh citrus. Simply line the bottom of the roasting pan and you're good to go. Also, if you're not using herbed butter under the skin and in general over the bird, you have been missing out. This will keep the bird from drying out. Stuffing it with apples is also a nice touch. As the chicken roasts, the apples will steam from the inside out.
