Lemon-Garlic Green Beans w/ Cherry Tomatoes (aka my favorite side dish of summer ‘18) πŸ…πŸ‹ Ingredients:  12 oz trimmed green beans; 8 oz cherry tomatoes (you can use more, up to 16 oz);2 tbsp olive oil (or cooking fat of choice); 1 tbsp garlic powder; 1 tsp sea salt; pinch of pepper; 4 slices of lemon, sliced thinly; Optional: ¼ cup of parmesan cheese, grated  How:  1. Preheat your oven to 425F; 2. Put your green beans and cherry tomatoes in a baking dish, lined with parchment paper, if preferred; 3. Sprinkle with olive oil, garlic powder, salt, and pepper. Mix thoroughly.; 4. If using parmesan, sprinkle the parmesan on top; 5. Lay the four lemon slices on top of the mixture; 6. Bake for about 30-45 minutes, or until the green beans have some charred bits on them. . #savvyeats

Shabu Shabu for lunch today! I love that you get a huge plate of veggies with whatever meat you order. Today I did chicken and shrimp with shirataki noodles instead of udon so the bulk of my meal was 0 SP! So healthy and filling! I just tracked for some ponzu to dip my veggies in and the spicy miso broth I cooked everything in. So dang good I already can’t wait to go back!

Anyone else a fan of cooked cabbage?! πŸ™‹πŸ»‍β™€οΈπŸ˜‹ I LOVE it could probably eat an entire head all by myself. πŸ˜„ Tonight I made some simple Sausage, Potato, and Cabbage Foil Packs. They're full of buttery potatoes, tender cabbage, and spicy sausage - so filling and delicious! πŸ‘ŒπŸ»πŸ‘ŒπŸ» Recipe below. . . Sausage, Potato, and Cabbage Foil Packs - 4 @gilbertscraftsausages Andouille Chicken Sausages, sliced into 1/3 inch pieces (if you can't find this variety you can use something similar - these are 2 sp each) - 1 lb red potatoes, diced into 1/2 inch cubes - 1 small head of cabbage, roughly chopped into 1 inch pieces - 1 small onion, roughly diced - 4 tsp butter - 4 tsp olive oil - 8 tsp water - garlic powder - salt and pepper - green onion or parsley to garnish, if desired . . 1) Preheat oven to 425F. Prepare and lay out 4 large rectangles of foil.  2) In the center of each piece of foil place 4 oz of the diced potatoes. Season well with salt, pepper, and garlic powder.  Top potatoes with diced onion and then cabbage (about 1.5-2 cups of cabbage per packet). Season the second layer with salt, pepper, and garlic powder.  3) Drizzle veggies with 1 tsp olive oil per packet then top each 1 tsp butter and 2 tsp water. 4) Place the sliced sausage on top and seal up the packets, crimping the edges tightly.  5) Give each packet a little shake and place on a baking pan.  Bake for 35-40 minutes until the potatoes and cabbage are tender. Let rest for 5 minutes before opening. Garnish and enjoy! . . Each packet is 7 Weight Watchers Smart Points: sausage (2), butter (2), oil (1), 4 oz red potatoes (2).
