We introduced @blackvegfest attendees to our popular mushroom suya, banana bread muffin, and for the first time jollof quinoa, all the way from Lagos.  It was a first for many- trying Nigerian food and trying alkaline electric food. Based on the reviews and feedback we're sure it will not be their last time. 😋 . . . Eat well. Live better.
😋😋 Some lunches sorted!  TASTY VEGAN CREAMY THAI CARROT SOUP WITH BASIL  Ingredients 1 Tbsp (15 ml) coconut or olive oil 1/2 of 1 large yellow onion, chopped 3 cloves garlic, diced 1 pound carrots, scrubbed (or peeled) and chopped (~4 cups) Healthy pinch each salt and pepper 2 cups (480 ml) veggie stock + 2 cups water (480 ml) 1/3 cup creamy or crunchy salted natural peanut butter (use less for a less intense PB flavor) 2 tsp chili garlic sauce (use less for less spice) OPTIONAL TOPPINGS: Fresh basil, cilantro, or mint; coconut milk; brown sugar or agave nectar (sub honey if not vegan); Sriracha hot sauce (NOT LISTED: Coconut or Olive Oil for sautéing)  Instructions 1.Heat a large pot over medium heat. Dice onion and garlic. Add to pot with 1 Tbsp coconut or olive oil (or nonstick spray). Add carrots and cook for 5 minutes. 2.Season with a healthy pinch each salt and pepper, then add veggie stock and 2 cups of water and stir. 3.Bring to a low boil, then reduce heat to a simmer. Cover and cook for 20 minutes, or until veggies are tender (test by cutting a larger piece of carrot in half – it should cut with ease). 4.Transfer to a blender (or use an immersion blender) and blend until smooth and creamy. (Cover with a towel in case your lid leaks any soup while blending.) 5.Add peanut butter and chili garlic sauce to the blender and blend to combine, using a ‘puree’ or ‘liquify’ setting if you have it. 6.Taste and adjust seasonings as needed. For a touch of added sweetness, add a Tbsp or so of brown sugar, maple syrup or agave nectar (or honey if not vegan). Add more chili garlic sauce for more heat. 7. Serve immediately with fresh basil or herbs of choice. A drizzle of coconut milk will add a creamy, sweet touch. Serve with sriracha for extra heat. BREAKFAST TO GO  Ça devient une manie avec ces sorties piscines matinales, le petit-déjeuner sur le pouce. Alors ce matin après un test concluant de mes nouvelles lunettes polarisantes @nabaiji (le soleil, moins timide ce matin, m’a même facilité la tâche en rendant la piscine plus lumineuse), c’est à nouveau petit-déjeuner hyperprotéiné au bureau. Une délicieuse barre Whipped Bites @optimumnutrition_fr reçue dans ma @proteinboxfr d’août (mais découverte lors du chouette petit-déjeuner organisé par la marque, avec la très sympathique @that_french_girl_), une banane et un café. Good mornings start with good breakfasts! Well they actually start with not being awoken by a kitten attack or grumpy children (2nd born) but then the breakfast is the next best thing. Went to bed realising I hadn't had my HEXB, I usually save them for HiFi bars for evening snacking but I've been craving yoghurts instead so making sure I have the B allowance this mirning before I forget! This beautiful yellow doesn't require a filter. 📸🥝🍓🍊🍐 My breakfast today was a big bowl of mangoes from @marksandspencer . Not as tasty and flavourful as #pakistanimangoes (hands down THE best in the world 🙌🏻) but not a bad choice to curb those cravings. 😬 Mangoes have always been my most favourite fruit. Numerous health benefits, superb for skin, excellent ingredient for salads, shakes, smoothies , desserts--you name it.  Mangoes supply a healthy dose of vitamin A. You need plenty of vitamin A in your diet for healthy skin  and bone growth. Mangoes are packed with folic acid. Folate, or folic acid, is an essential B vitamin with many health benefits. Adequate dietary intake of folic acid is essential for a healthy pregnancy. Folic acid can help prevent birth defects including spina bifida and cleft palate. A folic acid deficiency can also cause miscarriage.
