Thomas Keller introduces a new 'good for you' chocolate #facts MAY. 1, 2018. #thomaskeller introduced the new #chocolate on a media tour of a little factory in south Napa, where K+M #extravirginchocolate is being produced  The “M” in the project is Tuscan #oliveoil producer #armandomanni who came up with the idea of making producing chocolate with heart-healthy olive oil rather than the usual coconut oil. Intrigued by the idea of taking “chocolate in a new, delicious and #healthy direction,” the duo of Keller and Manni spent five years spearheading research at the #universityofflorence  Manni was in #italy on the day of the tour, but Keller guided a group of journalists through the sweet-smelling plant where they are now making dark and milk chocolate under the direction of #chibui a #pastrychef who added boundless enthusiasm and in-depth scientific descriptions to the how and why of the new chocolate that is “good for the body, good for the soul.” The bottom line, however, #keller said, is people have to like it. “It has to make you happy. You have to #taste it and smile.” Always willing to do the hard work, the journalists tasted the different chocolates, made from beans sourced from Peru, Madagascar, Ecuador, and Nicaragua  It is, indeed, delicious, creamy, smooth and restrained in sugar so the rich #flavors of the chocolate can take center stage. It did, of course, require extensive tasting  The chocolate was subsequently cooked up in a pot de crème #dessert at a follow-up #friedchicken and #ribs dinner Keller hosted at #addendum , the backyard garden space behind his Ad Hoc restaurant in Yountville  Keller confirmed the rumor that’s been energetically circulating on social media, that he plans to open a Mexican bar and restaurant in the space that was Hurley’s in Yountville  Keller said he had decided on #mexican #foods because he thinks that’s what the town could use; there already are excellent #italian restaurants in Yountville, he
