We can't afford to let food waste in this house and why would we want to? • • • • Leftover muffin-tin grassfed meatloaf (with lots of hidden veggies) from dinner a few days ago, leftover strawberries from breakfast, purple cabbage & kale salad lightly sauteed in olive oil + a dash of himalayan salt, red pepper slices and dates. (We love dates, can you tell?)
Granola and choc chip cookies I haven’t been baking much recently but now that school is back I have realised that I need to give the kids after school snacks most days. I need something that’s easy to grab in the morning and will keep them going until dinner! We have to avoid coconut as well as nuts this year so this was my attempt to still make something yummy! #mummyslittlehelper#mrted#kidsinthekitchen#foodiekidsuk#granolachoccookies#messyjessie#mrmax#madefromscratch#yum#foodforkids#batchcooking#mummyslittlehelper#cookingwithkids#bakingwithkids#lovefood Ingredients: 120 g butter at room temperature 50g light brown sugar 2 eggs 1 teaspoon vanilla extract 40g wheatgerm 80g wholemeal spelt flour ½ teaspoon baking powder 40g chia seeds 40g sunflower seeds 40g pumpkin seeds 2Tbs linseeds 2 Tbs sesame seeds 40g dried raisins 100g dark chocolate choc chips Method: Preheat the oven to 180 degrees and line 2 baking trays with grease-proof paper. Cream the butter and sugar until pale and creamy. Add eggs and vanilla and mix well. Combine all the remaining ingredients in mixer and add butter mixture and stir to form a dough. Use a teaspoon to get small amounts of mixture and roll it into balls and place on baking tray. Use a fork to press it down. Bake for 15-20 minutes until golden brown. Allow to cool slightly before transferring them to a cooling rack. Store in an airtight container.
Graysons breakfast costed pennies. Dairy & grain free! 💃 • • • • Chia pudding recipe: Blend 1 cup of almond milk, 1/2 cup of rasberries (or any fruit you prefer) and 1/4 tsp cinnamon until smooth. Pour into your mason jar, add 1/4 cups of chia seeds. Stir to combine. Seal and store in the fridge overnight or up to 5 days. Top with your favorites when you're ready to eat! Grayson likes his plain or with coconut shavings, I like mine with granola.
