Okonomiyaki roughly means "grilled how you like". It's a highly customisable Japanese pancake. It comes in sweet or savoury, and is often made with vegetables, fish, meat, or bean paste. This one is a vegan version made with cabbage, carrot, spring onions and tofu. It uses besan to give it an eggy flavour.  Okonomiyaki was at its most popular in times of hardship- following the 1923 Kanto earthquake, and during WWII, when rice was in short supply. Nowadays, its popularity has spread throughout Asia. Did you know that the lineage of the good ol’ all-American doughnut goes back to the oly koeks (oil cakes) made by the Dutch settlers in “New Amsterdam “? These original dough nuts, as they came to be called, did not have holes. Until, as the story goes, Hanson Gregory, a 16 year old sailor on a merchant ship solved the problem of the tendency for his doughnut centers to be raw and greasy. He used a pepper tin to cut a hole in the center. When he returned from his voyages, he brought the technique plus many spices and nuts, home to his mother Elizabeth. Dolia (sing: Dolium) are large, ceramic, high-volume storage containers that were used all over the Classical Mediterranean for the purpose of food storage. They were housed in transport ships, in public eating establishments, or on a parcel of land like these dolia found in situ at Ostia Antica. Sometimes, a number of measure is inscribed below the mouth which tells us how many amphorae can be contained in the dolium. An amphora, as a standard unit of Roman measure, was approximately 26 litres. The number to the left of the inverted ‘C’ was the multiplier. Therefore, the pictured dolium could contain approximately 1,092 litres of dried food or liquid! . ———————————————————- Dolia (sing: Dolium) sono i grandi contenitori da ceramica in grande dimensioni che erano utilizzati in tutto il Mediterraneo Classico per conservazione degli alimenti. Autumn brings with it an abundance of delicious apples, both for cooking and eating. We came across this lovely recipe from Hannah Glasse's 'The Art of Cookery Made Plain and Easy', which was first published in 1747.  Something to try this weekend? "Place your apples into an earthen pan with a few cloves, a little lemon peel, some coarse sugar, a glass of red wine; put them into a quick oven and they will take an hour baking." This is what your most favorite cookbook looked like in 1936. Why was it your most favorite, you ask? Because it was customizable! This was Better Homes and Gardens revolutionary solution to the organized home cook. While being a traditional cookbook with recipes in and of itself, it also contained a pocket for loose handwritten recipes, lined notebook pages for note taking and recipe tweaking, a three ring binder style layout so that you could add and remove pages and alphabetized chapter tabs so that you could easily find what you needed. This was a true helper as it debuted during the Great Depression really tested the creativity and ingenuity of home cooks.
