So dinner last night. Bargain salmon from @supervalu_irl with coconut rice and buttered ginger tomatoes scaled down from @bonappetitmag 🤣 only because I did not have enough to make a whole batch. They are so incredible! I sautéed matchsticks of ginger and onion in a pan, added the toms and let it simmer then finished it with soy sauce. A sprinkle of the green tops to serve. Make it! TGIF🤩 three minute accompaniment to your Friday tipple: radishes with chive butter and smoked (or flaky!) sea salt. Served on crackers. With something cold. I mashed some snipped chives with some butter and spread it on crackers, sliced a few of these bright pink babies on top and sprinkled a bit of smoked salt. Yum! Adding cumin, chilli powder, lime juice and fresh coriander to our creamy and crunchy Coleslaw turns it Cajun for a gorgeous salad bowl. Made here with an oiled small tortilla baked for 7 mins inside a ramekin to make it bowl shaped. So if you’ve a craw for a slaw with a difference give this a go - ideal as well for sharing when only some like it hot 😎.
