Can you think of anything more delectable than fresh #guacamole at the end of a hot summer day?! 🥑🍅🌶 It’s one of the easiest and fastest appetizers/snacks to whip up that packs a nutritional punch 👊🏻 (minus the chips 😜). My little ones are impartial towards any store-bought or restaurant served guacamole, but if I am the one making it, they devour it!! It makes me happy as this is possibly the only form of avocado consumption they accept as of right now 🤷🏼♀️!! 🥑 My method is really easy and basic: 4 medium avocados, pitted with flesh scooped out with a spoon, mashed with a fork/potato masher with the juice of one lime until desired consistency. Then add 1 diced tomato or a few spoonfuls of pico de gallo or even salsa (if available), one small minced garlic clove, 1/2 teaspoon of kosher salt, a pinch or two of freshly ground black pepper, half a jalapeño seeded and finely chopped, 1-2 tablespoons of fresh cilantro. Stir everything together to combine. Taste and adjust with extra lime juice/salt/pepper/jalapeño to taste! Allow to sit at room temperature for a bit for the flavors to marry! Enjoy!! 🌮👩🏼🍳
