It’s Friday - we made it through the short week y’all! You deserve this one. Even chicken haters can love this. Ultra juicy and tender. Olive oil poached chicken in shallots and garlic is the real deal. So easy to make and so so good I tell you. That olive oil after is like liquid gold and the garlic like little gold nuggets.  _______  Use good extra virgin olive oil and pour it all over skin on, bone in chicken pieces in a baking dish until covered. Add a whole head of peeled garlic cloves and several halved shallots. Salt and pepper to taste. Add your favorite herbs - I had thyme on hand so I threw that in. Let it cook on 325 for 1.5-2 hrs. Take the chicken out and sear the skin on a heavy bottomed pan. Enjoy with extra cracked black pepper! I’m feeling lazy and tired today after doing household chores so I decided to do one pot meal for lunch. Have prepared chicken mushroom tomato rice. I sautéed all the ingredients in my rice cooker n using the same pot to cook the rice. Very simple ingredients but yield flavourful rice for lunch. CHANA DAL CHAWAL / SPLIT CHICKPEA LENTIL RICE with thin crispy Kali mirch papad/ pepper  papadum & cucumber tomato salad .  Many times what you cook....bring back so many memories.....every dish has many stories attached to it. Chana dal wale chawal were made by my mother when she would go out of stock with veggies. And at that time I used to ask her to make something else for me and would be so annoyed on seeing this dish. Many times she would add wadi( black gram/ urad dal / lentil nuggets) into it. But as I grew I realized that it's an awesome one pot meal...I started liking it's taste.It gives you wholesome nourishment and extremely easy to cook. It goes well with boondi Raita. . . 1. Tempered oil in cooker with Zeera/ cumin , Bay leaves and dried red chilli. 2. Added finely sliced onions and sauteed them till they were translucent. 3. Added pre soaked chana dal /split chick pea lentil ( adjust quantity as per your wish...for a cup of rice I took 1/4 the cup dal) 4. Added very little water and pressure cooked for 2 whistles. 5. Opened cooker after 7-8 minutes and added soaked rice into it. 6. Added double the quantity of water , salt and coriander powder . 7. Let it cook with just the cooker lid kept on it till rice is nice and soft. 8. Who doesn’t love burgers? Unfortunately fast food burger patties are riddled with fillers, excess salt, preservatives, additives, colours, the list goes on! They are also typically very low quality cuts of meat and have been treated with hormones and antibiotics. Refined breadcrumbs full of sugar are also added. Making your own burger patties is so, so easy and a great way to indulge in delicious food without the guilt. To make your own combine in a bowl:  750g of grass fed beef mince 1 cup of quinoa flakes 1 large brown onion 1 whisked egg ¼ cup chopped parsley 2 crushed garlic cloves Himlayan salt and pepper to season  Separate the mixture into 6 portions for 6 patties. Roll into a ball and press on it to form the right shape. They should be around 1.5cm thick.  Place the patties on baking paper and place them in the fridge for 45 minutes to chill.  Remove the patties and cook them in a non-stick pan before building your burger.  Use the above recipe as a base for lots of different flavour combinations! Sometimes cooking is just throwing things together. I had some chicken apple sausages that I needed to use. I ended up throwing these in a pan and adding pasta and broth to make a one pot dinner. I added some parm and whole milk to make a little sauce and added frozen broccoli. It turned out pretty well and the boys ate it up!! 💖Andong Jijimdak💖 Sudden cravings for Korean and Japanese food lately.  Attempted this Andong Jijimdak dish which I fell in love the first time I had it in Korea many years back. It’s like a sweet soy braised chicken with a mild spicy kick from dried chilli added to it. But of course I added more chilli because I love spicy spicy! 😋 INGREDIENTS: -Chicken thigh -Cucumber -Carrot -Potato -Bean sprouts -Onion -Glass noodles To make the sauce - mix these in a bowl: -Soy sauce -Brown sugar -Honey -Mirin -Oyster sauce -Minced garlic -Minced ginger -Sesame oil -Dried red chilli  STEPS: In a pot, cook the chicken cubes first. Than pour in the sauce and bring to boil. Lastly, pour in all your ingredients in the pot and let it simmer - the longer the better as the sauce gets tastier and the meat gets more tender! This may not look pretty but it was a genius meal prep idea.  I threw an entire bag (2 lbs?) of frozen chicken breasts in the crockpot with around half a bottle of Paleo Chef ginger cilantro marinade and a quarter or so box of chicken broth. Cooked on low around 7 hours.  I shredded the chicken in the pot then added around half a head of cauliflower riced, a few handfuls of finely chopped dino kale, a few handfuls of fresh cilantro, and garlic powder. Turned back to high for about 15-20 extra minutes. Then I served it on @sietefoods tortillas but it is also good on its own, a sort of soupy arroz con pollo.  My belly still isn’t 100% after having a stomach virus all week so having a big vat of this brothy healing goodness to last me a few days will keep my belly healing up.  I had the best Sunday and I hope you all did too 💫💖

Also stuffed zucchini, tomatoes, and small bell peppers. Made a sauce of fresh, chopped tomatoes, a little butter, and a homemade tomato sauce. Added fresh dill. Poured the sauce over the stuffed vegetables. Added a little butter. Vegetables were layered in a deep cast iron pot. Put a plate over the top of the pot and then the lid. Cooked medium heat until all the vegetables were soft and tender. Let sit after cooking for 1/2 hour and enjoy the medley of vegetables with its own sauce poured over it. Pasta with veggies - a healthier take on a typically unhealthy convenience meal. You can use any type of pasta and veggies you like and only one pot is required.  I cook chosen pasta - dry or fresh - by the directions and add fresh veggies a minute or two before it’s done cooking. (You can also add frozen veggies, just add them earlier in the cooking process.) Then strain the pasta and move back into the pot or into a serving dish. Add olive oil and seasoning or pasta sauce, top with nutritional yeast (optional) and enjoy!
