Anyone else think that breakfast food can be eaten at any meal?! ๐Ÿ™‹๐Ÿผ‍โ™€๏ธ๐Ÿณ These @birchbenders PALEO pancakes were drool-worthy and almost didn’t make it through to the picture. ๐Ÿคค My nutritional focus lately has been on eating low-glycemic foods. I really like this mix because it’s made of nutrient-dense ingredients, so I can enjoy my pancakes any time of day without spiking my blood sugar! I topped the pancakes with reduced blueberries (frozen blueberries simmered on LOW for 10-15 min with a bit of coconut oil, water and honey), almond butter & some cashew yogurt. These Paleo Whole30 Gyro Burgers have all the traditional Greek flavors of a gyro, but made so much easier. They’re a mixture of lamb and beef, but if you have a hard time finding lamb you can definitely use all beef. They are flavorful, juicy, and so good with some tzatziki  sauce. Trying to eat more fish? This fish Veracruzana-style has been a favorite of so many of my professional athlete clients (that I previously had to practically bribe to get them to eat the seafood servings their doctors were encouraging them to eat). ๐Ÿ˜† It’s so fantastic! (Works with shrimp too- beautifully!) # Simply sear the fish (I used defrosted frozen wild halibut for this quick and easy meal), then add some of our Smoky Latin Healthy cooking & seasoning sauce to the pan. *I used 1/2 cup for a little over a pound of fish). Add a bit of water to bring the liquid about 1/3 up the side of the fish. Season with salt to taste. Cook over medium-high heat until the fish is cooked through, and the sauce has evaporated down to a glorious, rich consistency. It is Finally Pumpkin Spice season!! ๐ŸŽƒ  And I made my very own Paleo Pumpkin Spice Muffins!! They are sooo delicious and have inspired me to make more things with these amazing flavours... so be aware of more to come ๐Ÿ˜‚  You’ll need: .๐ŸŽƒ3 eggs .๐ŸŽƒ1 cup pumpkin .๐ŸŽƒ1/3 cup coconut milk .๐ŸŽƒ1/4 cup maple syrup .๐ŸŽƒ1/4 cup honey .๐ŸŽƒ1 tsp vanilla .๐ŸŽƒ1 3/4 almond flour .๐ŸŽƒ1/4 cup tapioca flour .๐ŸŽƒ1/8 cup coconut flour .๐ŸŽƒ2 tsp gluten free baking powder .๐ŸŽƒtbsp cinnamon .๐ŸŽƒ1 tsp ginger .๐ŸŽƒ1/2 tsp nutmeg .๐ŸŽƒ1/2 tsp allspice . ..... ..... .๐ŸŽƒpreheat oven to 350•f .๐ŸŽƒyou mix the dry and wet in separate bowls, then add the wet to the dry .๐ŸŽƒmix until smooth and divide into a 12 muffin tray .๐ŸŽƒbake for 30 minutes on the middle rack, turning half way through .๐ŸŽƒtest with a tooth pick -stick one in the middle and pull it out, if it comes out clean it’s done!  Super moist and rich!
