Went home on my break to make this amazing lunch (which admittedly looks more like a breakfast!) . Grain free bun made with @lovemybunspaleo mix, topped with @kerrygoldirl grass-fed butter and a pastured @ferme_reveuse egg. Two slices of @greenfieldnaturalmeatco bacon and a bit of @traderjoes wild mushroom brie. . I hadn’t been able to get Kerrygold in years, so I am SO happy to have it back in my life! For me, Irish butter is rich not just in its superior grass-fed flavour, but also in childhood nostalgia. My dad was born and raised in Ireland, so Kerrygold was a staple in our home growing up. I have fond memories of spreading it across warm, fresh slices of my Nana’s brown soda bread when we would visit her in Dublin in the summers. . When I moved to Canada from the US, I learned to my great chagrin that Canada’s protectionist dairy import laws meant I would not be able to buy it in stores here. I assumed this meant it would also be illegal to bring it across the border with me. But earlier this year, I was thrilled to learn that I could in fact bring it back to Canada with me. So who bought two pounds of Kerrygold on her trip to Cape Cod? This girl! 🙌🏻 . Full disclosure, by the way—I totally added more butter after taking this photo 😂
🚨Meal Prep Hack . Protein Packed One Pan Hash is one of my absolute favorite meal prep hacks out there! Not to mention it’s one of my favorite grab and go snacks as well! 😜 . I 💚 individually wrapped @gilbertscraftsausages Caprese or Early Bird Green Pepper & Onion Breakfast sausage in order to make as much or as little as I want! . Yesterday I used ✌🏼boxes of sausage and added in one pepper, one sweet potato, one leek, one onion, and loads of kale to make a huge batch that I could divide into 8 snack portions to have on hand for the week! . Today my morning ritual consisted of a big cup of chaga tea all blended up with coconut oil and vanilla. . Chaga boosts the immune system, is chock full of antioxidants and is an adaptogenic herb (meaning that it helps the body to adapt to stress). . From an oriental medicinal perspective it greatly tonifies and regulates the qi. . This means that it replenishes our body's resources and encourages a free flow of circulation. . It also tastes delicious with hints of a bitter earthiness and sweet vanilla. . I blended 2 cups of chaga tea that had been simmered for several hours with 1 tablespoon of coconut oil and a half teaspoon of vanilla. . Perfect creamy delightfulness to enjoy while my husband and I plot to take over our world alongside our cats and our houseplants!
