Made a big batch of this for kids lunches this week! It’s quick, easy and kid friendly. The best part is it’s a perfect make ahead lunch and meal prep idea. Logan helped chop all the veggies and it’s great to practice kids knife skills! I keep it in the fridge for 3-4 days. You can grab the recipe in the toddler ebook (link in bio) ❤️
I cooked #tunasteak and paired it with Sundays #pastasalad for supper. I played around with spices on this rub. All in all the tuna was juicy and flavorful and paired well with olive oils and avocado in the pasta salad. Cheers 🥂 😉 This was all made by me from scratch. Blue Apron won’t take credit for this haha.
Tuna Avocado Pasta Salad 🐟🥑 Super simple, delicious, and #21daymealplan compliant! Recipe below!👇🏻 . . . Cook one serving of brown rice rotini according to instructions (boil 2/3 c. for ~14 min), strain and set aside to cool. Meanwhile, blend a couple tablespoons of oil (avocado preferably), half an avocado, about three or four tablespoons of apple cider vinegar and desired spices. I used @simplyorganicfoods “Citrus A’Peel” and black pepper. Once blended until smooth, add dressing to a bowl with one drained can of tuna (in water). Mix until well combined. Add pasta and mix. Tastes so good! Can’t even tell there’s no salt. . . . Adding other veggies and spices can really make it a complete meal, but today I needed something quick and simple. 💁🏼♀️ My cat loved the tuna juice drained from the can! She wanted more! 😸
