These stuffed peppers were da bomb🤪 They’re so flavorful but yet still super healthy! Not only are they low calorie and high protein but they’re a great way to get you veggies in. Even better they’re also gluten free AND dairy free! Also feel free to use whatever ground meat you prefer, I used ground turkey😊 ———————————————————- What you’ll need: -6 bell peppers, whatever color you prefer -2 cups of gluten free wild rice -1 pound of lean ground turkey -3 cloves of garlic, minced (I prefer fresh garlic but you can use jarred garlic too if you’re in a time crunch) -1 onion, diced -1 tbsp. of olive oil -16 oz of crushed tomato -1 tsp. of Italian seasoning -1 tsp. of salt -1/2 tsp. of ground black pepper -1/2 tsp. of cayenne pepper -1/2 tsp. of paprika ——————————————————— Directions: Cook Wild Rice according to package instructions.Next preheat the oven to 350 degrees. Wash, halve the peppers, and remove the insides including the seeds. Boil the peppers for 5 minutes, and place on a paper towel upside down to cool. In a large skillet place the onions, garlic and oil in a pan and sauté until onions are translucent. Next add the ground turkey and mix frequently. Once turkey is completely cooked add tomatoes, rice, and seasonings. Once combined, put peppers into a large casserole dish and fill peppers with mixture.
