Seafood (other than fish) is hardly featured in my #homecooking and I wanted to change that with this lush #thaiinspired#seafoodsoup with salmon, prawns and mussels. Thanks to @opentaste.sg I can get well cleaned fresh seafood. #recipe 6 minced garlic cloves 1 thumb of minced ginger 1 finely diced large purple onion - fried till translucent Add 2 teaspoon of @mekhalaliving turmeric lemongrass paste - fry to release the fragrance Add 3 local tomatoes - fry to wilt Add 4 tablespoon fresh coconut milk and 4 cups water(or enough to cover 3/4 of all ingredients) Season with 1 tblspn fish sauce and a little honey and bring to boil Add French beans (or broccoli or any firm greens) Simmer for a minute Add salmon pieces Add thin slices of lime leaf(2 leaves in total) Add cut corn (mine was precooked leftover from soup night before) Simmer for 1 minute Add deveined prawns and mussels Simmer for 2 minutes Remove from heat Sprinkle parsley and remaining lime leaf Serve in individual bowls and steaming rice or dip in sourdough bread This was really #tasty I didn’t add chilli as my Son had to eat it and he loved it as much as everyone else. Licked the bowl clean as they say. Given the colourful vegetables rich in #fiber and #phytonutrients (purple, white, red, green and yellow) and the #omega3 from salmon, mussels and prawns, and the spices of garlic, ginger, turmeric and lemongrass, this is a great addition to an #antiinflammatorydiet#nutritionaltherapy

Day 1 - Veggies. We eat A LOT of veggies! Tons of dark greens like kale, chard, spinach as even some unusual ones like dandelion and watercress. We eat all kind of veggies, in all colors of the rainbow. The only veggies we do not eat (unless we pressure cook) are the nightshade varieties. These include tomatoes, peppers (including spices), eggplant, russet potatoes, and all squashes. Nightshades are very inflammatory and cause lots of havoc in those with leaky gut/autoimmune issues. The reason for this is the #lectins found in those veggies. When you pressure cook them, you decrease the amount of lectins. Which make them more friendly for your tummy. * * Getting a variety of color in your veggies is crucial bc each color has different nutrients your body needs. Some of the super colorful veggies contain phytonutrients which are vital for building a stronger immune system and boosting our natural detoxification process. * * People ask us if we eat carbs all the time.
