POST-BIG RUN BAKED BEETROOT FALAFEL SALAD 🥙: . WHAT’S IN IT? Baked beetroot falafel, guac, rice, peas and black beans, broccoli, spiced almond hummus, courgette and tomato vinaigrette salad. . Who knew you could make beetroot falafel? Well, I didn’t. This is a particularly protein rich and varied plant-based assortment: beans, rice, falafel, I also chucked on some seeds. I had this after my routine weekly long run the other day as it’s got a good balance of good fats, carbs and protein for sweet, sweet recovery 🏃🏻♂️💨.
