A corn & leek puree is made with butter, white wine & corn stock, we add this to the risotto with mascarpone, parmesan & finish with parsley. The quail is boned (still has leg bones), marinated & chargrilled. Wagin is a small town in the Great Southern region of Western Australia, approximately 225 km south-east of Perth.
