Well, I am home from Indy Coach Summit and hungry... I tried to eat watermelon and nutty buddy bars(once they were cold from being in the freezer) because I need to unpack and head to bed but I was still hungry! So thankfully my Mom picked up my staple salad/veggie for me today!! This mix includes many veggies that I used to think in my mind that I did not like! Come to find out they are pretty amazing and crunchy like chips! And tomorrow night I’ll add hard boiled eggs and quinoa to the containers! As for lunch tmr I am probably going out to eat w my mom and baby boy! Don’t know something until you try it, you may be surprised how delicious it is and how great it makes you feel!!
Soup weather 👏🏼 Hubby made me the most comforting soup on the weekend, which was literally just all the veg in the crisper (cauliflower, purple & orange carrot he tells me) + stock & spices, it was sooo good 🤤 We paired it with a slice of grainy bread smothered in a super simple chunky almond pesto (which is really just one of those throw-it-all-together recipes based on whatever you have on hand). We blitzed one bunch of basil leaves + some of the stem, with 1 cup of salted almonds, the juice of a lemon and a drizzle of extra virgin olive oil + a little water to reach desired consistency. I think I might help myself to another bowl now 🤔 #winterfood
Today was a busy Sunday! I started off the morning at church, then played tennis 🎾, watched some soccer games ⚽️ and then went to the driving range⛳️. I am so tired and ready for a good night of sleep tonight 😴 . . With such a busy day, I was glad I had a prepped sweet potato leftover from last week. Thanks to the meal prep and Trader Joe’s microwaveable meatballs, I pulled this lunch together in less than 5 minutes and it gave me the fuel I needed to keep going 🏋🏻♀️
