When you drive 35 miles from Long Beach to Beverly Hills with lots of traffic just for cake you must really be a little crazy or driven? What’s worse is getting said cake to go and driving 35 miles back so you can take a pretty picture in better lighting at home = torture and willpower. It was worth the drive!! So dense and buttery with a nice raspberry lemon frosting.
I was going to share this recipe last night, but then I fell asleep with Sophie in her bed at 7:30.🙊I was fairly exhausted yesterday and must have needed the extra sleep! This is a twist on the Australian Women’s Weekly, Raspberry yoghurt loaf cake... I added a few drops of doTERRA lemon essential oil and voila, I present you the Lemon & Raspberry yoghurt loaf cake 😂 To make, simply beat 1/2 cup (125g) butter and 3/4 cup (165g) firmly packed brown sugar until light and fluffy. Beat in 2 eggs. Stir in 1&1/4 cups (200g) SR flour, 1/2 cup (140g) greek yoghurt and 100g frozen raspberries. Finally, stir in 3-4 drops doTERRA lemon essential oil. Spread into loaf pan (greased or lined with baking paper) and bake for 1 hour at 180 degrees celcius. Let it cool in cake pan for 10mins before turning onto wire rack. Allow to cool completely and then spread a little lemon icing (icing sugar, butter, dash boiling water, 2-3drops lemon oil) and sprinkle grated lemon rind on top. It’s such a simple cake to bake and will make your house smell soooo good when it’s baking. Happy Sunday everyone!!
Mix it up with a maple water mojito! Ingredients: 1⁄4 cup fresh raspberries 6-8 mint leaves, plus more for garnish 1 oz. rum Juice of 1⁄2 lime DRINKmaple Raspberry Lemon Optional: 1 tbsp simple syrup 1. Add mint leaves and half of the raspberries (and simple syrup, if you’re using it) to the bottom of a glass and muddle with a muddler or a flat-bottomed utensil. 2. Then, add ice to your glass and add in the rest of the raspberries. Pour rum, lime juice and DRINKmaple overtop and stir with a straw or spoon. 3. Garnish with additional mint leaves and enjoy!
