How gorgeous is this beet? Almost as if I pulled it out of the ground myself, I can still feel the prana (life force) in it... I got it at a local farmers market. I’ve been reading that beets, specifically beet juice, does wonders for muscle recover and lots of #athletes use it in their training. Ever heard that? I have an interesting history with beets 😝 When I was a kid I was anemic and the doctor prescribed a natural solution (yay!) which was beet juice with honey. Beets can thank their gorgeous color to high levels of iron. Now, this was before I became #vegetarian and then #vegan, and lots of people think that is the main reason for anemia. However many don’t know how important our colon and intestine health is for absorbency, and just eating something doesn’t mean the body will actually receive all the nutrients. Iron is one of the hardest micronutrients to absorb, that is why anemia is common even among those who aren’t plant based. After cleansing my colon, my absorbency rate increased and I luckily haven’t suffered any deficiencies since. But because I had to drink beet juice for a while I became very averse to it! I didn’t eat beets for over a decade 😂😮 I know, I missed out tons. But luckily I got over it a few years back and now I try to add beets to my diet weekly. My fave is freshly grated in a salad.
