The fact that @bachelorinparadise is on twice a week is ruining me. I’ve spent an embarrassing amount of hours watching reality tv. Why is this trash so addicting? 😂 This week I made @food52’s Whipped Feta and Ricotta Dip with caramelized shallots, roasted garlic, chives, basil, dill, lemon zest and olive oil, with toasted sourdough. It’s been helpful for all the stress eating I’m doing during this season of BIP 😐

Roasted chicken thighs with Dijon cream sauce 🥘 Bone-in, skin-on chicken thighs are unequivocally the best way to eat chicken. This one-pan wonder is currently my husband’s favorite dinner, and it’s so easy and delicious I’ve made it twice in one week. You first have to sear the chicken to get that skin nice and crispy. Dry the chicken thighs with paper towels and sprinkle generously with kosher salt and fresh cracked pepper. Heat some olive oil in a cast iron skillet and cook the chicken skin side down for about 5-10 minutes until golden brown. Transfer the chicken to a plate with the skins up so they stay crispy. Remove some of the fat from the pan and sauté a couple of minced shallots for a few minutes, then add a chopped clove of garlic for 30 seconds, then deglaze the pan with about half a cup of dry white wine (scrape up all those yummy brown bits). Once half of the liquid has evaporated, add about a cup of chicken stock and a couple tablespoons of whole grain mustard. Let it come to a boil, then simmer for a few minutes. Nestle the chicken thighs back in the pan and cook in the oven at 400 for about 20 minutes. Once the chicken is cooked through, remove from the pan and let it rest for a couple minutes while you finish the sauce (don’t cover the chicken or the skin can get soft!). Whisk a quarter cup of Dijon mustard into the pan drippings and simmer for a few minutes over medium heat. Once the sauce is reduced a bit, turn off the heat and whisk in about a quarter cup of heavy cream. Add salt and pepper to taste. Lay the chicken back on top of the sauce, sprinkle with some fresh thyme, and serve right out of the cast iron skillet with some crusty sourdough bread for dipping and a simple green salad on the side. Oh, and the rest of that dry white wine.

After school snack session complete with juice box, cookies and books. Before we turn the TV on during the school week Avery has to read three books and then we only watch documentaries, no endless cartoons. There’s plenty of times he said ‘not another documentary’ with a whiny voice. But then we find a really fascinating documentary about the Great Pyramid of Giza , animals in the Arctic or discover facts about sharks and he’s hooked, I’m hooked! Also any book recommendations for a 7 year old ? Working this week with my lovely and talented friend @cloudsandcoffee making pretty pictures of summer food like this watermelon salad. Triangle shapes are fun for a change. Toss them with oil-cured olives and pecorino romano, a little sea salt, drizzle with olive oil and red wine vinegar. Serve cold. 🍉
