This vegan cobb salad was a massive hit during my #saladchallenge earlier this month which basically means I can't keep it to myself AND you probably need it in your life! 💁🏻♀️ . In the bowl: loads of greens, chickpeas, grape tomatoes, cucumber, carrots, corn, red onion, tempeh or coconut bacon (I have recipes for both #ontheblog -- link for the coconut bacon is in my profile), avocados and fresh dill. Top with your favorite dressing and dive in! 🥗💃🏻💯 #saladeveryday#eatingbirdfood
I absolutely love Mexican food - who is with me? So I decided to make some homemade refried beans with guacamole, fresh tomatoes, corn and corn tortilla chips served on a plate of lettuce with mustard-tahini-dressing - yum 😋.

Eat Carbs & Drink Water Don't listen to silly magazine articles that tell you carbs are bad for you and you'll never get in shape by eating them. Everything is great in moderation, which is why the macro diet is soo effective! 🎉 carbs are an instant source
In case you haven’t seen my chronicles of being SO HUNGRY on my stories every morning, I’ve been trying out 16/8 intermittent fasting this week (still v skeptical and I miss oats, but it’s helped with digestion) and breaking my fast every day with a salad monstrosity 💪🥗 This one was spring mix 🌱, raw carrots and yellow bell peppers 🥕, grilled tempeh, a sprinkle each of hemp seeds and pepitas, and then topped with avocado 🥑, store-bought pickled ginger, and homemade pickled red onion 🙌 Veggie heaven! Drizzled with a homemade dressing of sesame oil, soy sauce, rice vinegar, and red pepper flakes. Leaving for the beach tomorrow for MDW, can’t wait!!!! 😍🌊☀️🍻
