Well, Stuff my Peppers! One of our favourite summer meals is this ‘Horiatiki Stuffed Peppers’. All the fun of a Greek Village Salad (I replace the cucumber with zucchini), along with some chicken (or lamb, or none!) and brown rice (or bulgur or quinoa) inside these sweet peppers. And cayenne for kick! 🌶 Some of the filling is bound to spill over into the broth, and I say, it’s soup for tomorrow’s lunch! 😉 These babies will get topped with feta, lemon zest and thyme when their finished braising in the oven. Pesto shrimp kabobs because anything on a skewer is more fun to eat, right? And If you can’t tell, I’m not over tomatoes yet. Sweet, tangy bursts between bites is the perfect balance. The best part? This dish can be accomplished in 30 minutes or less. . . . . . 2 MINUTE PESTO  2-3 c basil  1 c parmigiano reggiano (grana padana or Parmesan)  1/2 c good EVOO 4-5 garlic cloves  Salt and pepper to taste (~1 t salt, 1/2 t pepper)  Lemon zest  1/2 lemon, juiced . . Pulse all ingredients in a food processor. The addition of lemon zest and lemon is a perfect compliment to seafood dishes. You can leave this out and it’ll still be delicious! Tip: don’t cook pesto - only use it raw to keep the flavor integrity. . . . SHRIMP Raw large gulf shrimp  Magic seasoning  Salt and pepper to taste  Unsalted butter  Avocado oil . . . Season shrimp with creole seasoning. Heat stainless steel or heavy bottomed pan to medium high with avocado oil and butter. About a year ago today, Mark and I drove down to Tucson, Arizona to check out the Arizona Cactus Ranch prickly pear farm. Arizona monsoon rains and high Summer temperatures cause our cacti to bloom some beautiful vibrant fruit. These monster cookie are scary good. 🤪 Monster Cookies  Ingredients: 1/2 c butter, softened 1 c light brown sugar 1/2 c creamy peanut butted 1 tsp vanilla 1 egg 3/4 c Cup4Cup gluten free flour (or favorite blend) 1/4 tsp salt 1 tsp baking soda 1 1/2 c oats 3 Tbs flax seeds Add ins: Chocolate chips, M&Ms (preferably peanut butter like I have here, nuts, literally anything.  Directions: Preheat oven to 350°. In a small bowl combine dry ingredients and set aside. In a separate bowl or stand mixer, cream butter and sugar. Add peanut butter, egg and vanilla. Add dry ingredients to wet. Once combined stir in add-ins. Bake on greased or prepared baking sheet for 12-15 minutes.

I’ve been waiting so long to share this news!  The contract is signed, and the Pasta Friday cookbook is officially happening! It will be published September 2019 by Andrews McMeel (@andrewsmcmeel who also published one of my grandmother’s favorite books, the @bluechairfruit cookbook). And, I get to again work with @sararemington, my friend, and crazy talented photographer.  It’s been quite a whirlwind. Less than one year ago, I sold my restaurant and had no idea what I was doing with my life. I started Pasta Friday as a way to lift my spirits, to spend more time with friends, to build a bigger community. Never did I think it would be the catalyst for my second act in life.  And this all just feels so right. Like this is what I was meant to do. But I almost gave up so many times this year. So many times I thought this would never happen. But my husband, my family, my friends, my amazing agent-they all pushed. They all told me, “you should see in yourself what we see in you.” I’m finally starting to listen.
