#dessert #rawvegan 🍎🍍🌱. . . I had 3 chopped slices of pineapple which are at the bottom, a head of romaine lettuce, 2 sticks of celery, 4 apples and 2 bananas plus a big salad with some. Sunflower seeds.That was a combined dinner/dessert meal πŸ˜‹! Feeling proud about not stuffing myself and still feeling energetic this evening. I’m stopping food consumption around 7:00 pm each day to have my first meal tomorrow around 11:00- 12:00 pm. Yes, I’m losing little by little what doesn’t belong in my body and I have tons of energy!!! Coffee free!!! 🚫 πŸ‘Ž β˜•οΈ (Just green tea 🍡 πŸ’šthough). . . The hosts, Nichole & Callie, ALWAYS get me thinking. If you care about working towards true social justice for everyone then this is the podcast for you! They take an anti-capitalist stance too, which is something I enjoy being challenged on. Capitalist thinking is so ingrained in western society that I often engage in it without even knowing. Travelling has got me craving home cooked meals like this plate of goodness full of nutrients 🌱  Ingredients:  70g brown rice (dry weight)  100g cauliflower  1/2 mixed peppers  1/2 can of black beans  1/4 courgette  60g tenderstem broccoli πŸ₯¦  50g mushrooms πŸ„  1/2 medium sweet potato / 1 small  1/4- 1/2 avocado πŸ₯‘  Handful of spinach  Sprinkle of nutritional yeast  Herbs and spices: Paprika, garlic powder, mixed herbs, black pepper.  1. Cut the cauliflower into florets and season with herbs and spices and sprinkle some nutritional yeast on. Cut the sweet potato into small cubes and do the same before roasting in the oven at 200 degrees for around 30 minutes. Flip half way through.  2. Rinse and put the brown rice on boil for the same amount of time.  3. Start sautéing the vegetables starting with the ones that take longer to cook- broccoli, peppers, mushrooms and then the rest. I always add the spinach last minute or have it raw with my meal to reap the most nutrients. Add the black beans too.  4. Once all cooked, add to a plate and top with sliced avocado and more nutritional yeast.  Calories: 575  C: 75g F:13.5g P: 25g
Choc vanilla cashew protein porridge πŸ₯£ Back home from my week away and I couldn’t wait to have my bowl of oats for breakfast 😍  40g oats  30g @sfnutrition vegan chocolate protein (10g mixed with milk/ water as a sauce)  1 banana chopped (cook 3/4 of it in the porridge)  30g frozen blueberries cooked into the porridge  150ml @pipandnut unsweetened almond milk  25g @eattroo granola  1 chopped brazil nut  10g @meridianfoods cashew butter  Calories: 600 C: 67g F: 22 P: 32g
Quinoa mixed with bbq sautéed vegetables and sweet potato black bean sausages πŸ˜›  40g uncooked quinoa  50g white mushrooms 1/4 of courgette  1/4 red pepper  50g cherry tomato  Handful of spinach  20ml @doctor_wills bbq sauce  1/4 avocado  @goshfreefrom sweet potato and black bean sausages  1. Whilst the quinoa and sausages are cooking, prepare your vegetables and start sautéing them starting with the ones that take longest to cook.  2. Add spices like paprika, garlic powder, mixed herbs and black pepper. 3. Right before everything is cooked, add the spinach to wilt and mix in the bbq sauce. Then serve with sliced avocado πŸ₯‘  Calories: 420 C: 58g F: 14g P: 15g
