Fresh hot muffins! Today I set out to craft a healthy yet yummy banana muffin (because let’s be honest, that’s what you do once the naners get brown!) and I think I did it! NSA Nanner Nut Muffins 4 tablespoons coconut oil 1/3 cup of unsweetened applesauce 3 over ripe bananas mashed 1/4 cup whole fat vanilla yogurt 2 teaspoons vanilla extract 2 eggs 1 1/2 teaspoons cinnamon 1 teaspoon baking soda 1/2 teaspoon salt 3/4 cup of ground walnuts 1 3/4 cup whole wheat flour Mash your bananas in the bowl then add everything else slowly in the order written and make sure it’s all mixed up. It’s pretty easy. Bake on 350 F for 15-17 minutes. You could leave them like this and keep them no sugar added, but I’m a sucker for a crumbly too, so I added some sugar crystals and cinnamon to the tops for a little extra yum value! I added ground walnuts because I don’t like big chunks of nuts but I do love the added omega 3 punch that walnuts pack. The average American doesn’t get enough omega 3 and it is so good for your heart, brain, and joints just to name a few!
